Danko is an older, though not quite heirloom variety, delevoped in 1970's Poland. It's performance makes it seem more wheat-like for a rye but it is still very low gluten. Flavors of toasted oats and a bit of raw cacao, less peppery than Abruzzi variety but still a hint of spice. Certified Organic.
