Grown on the Eastern shore by Fred and David Sachs this hard red winter wheat (heirloom variety named Rouge De Bourdeaux) has impressed from its earliest trials. Has good strength yet supple and extensible, does particularly well with yeasted breads/pastries but can serve 100% as bread with a deft hand. Grown certified organic.
